If you like your salsa on the mild side, increase the number of tomatoes and use just one or two “regular” hot peppers.

Ingredients

• 6 mild to medium hot peppers, diced

• 2 tomatoes, chopped

• 1 onion, diced

• 2 tbsp. rice vinegar

• Dash of olive oil

• 1 tbsp. cilantro, chopped

1. Cut off the stems. Remove the seeds from the peppers. Remove the stems from the tomatoes and peel the onion. Then chop and dice everything very fine. (Try to do this part by hand; it’s almost impossible to achieve the right consistency with a food processor.)

2.Place the mixture in a medium bowl. Toss with the vinegar, olive oil, and cilantro. Grab your favorite chips and dip away! Makes about two cups.
