Here are just a few to get you started - PB&J French Toast with a giant, steamy mug of peanut butter hot chocolate. If heaven had a brunch menu, this would certainly be on it. You may want to take it easy on the sugar for a while, but it’s definitely worth it.
Peanut Butter and Jelly French Toast
This playful twist on the classic PB&J takes the jelly out of the sandwich and turns it into a fruity syrup-perfect for drizzling or dipping. This dish is great to serve at a big family breakfast or brunch.
Makes 4 servings
1. Pour the grape juice concentrate into a small saucepan and simmer uncovered for 20 minutes. Stir constantly, being careful not to let the juice burn.
2. Spread about 2 tablespoons of the peanut butter on 4 slices of bread. Place the other 4 slices of bread atop those covered with peanut butter, pressing down on them lightly, and set aside.
3. In a shallow bowl, whisk together the eggs and milk. Dip both sides of each sandwich in the egg and milk mixture so that the bread is coated evenly.
4. Melt the butter in a large frying pan or skillet over medium heat. Place the sandwiches in the pan. Cook for about 2 minutes per side, or until golden brown.
5. Cut each sandwich in half diagonally and serve with the grape syrup.
